    This White Koji is formulated specifically for brewing beer with citric acid. Citric acid tends to have a less harsh astringency when compared to lactic acid. Used at a high percentage (20-25%), it makes a very clean kettle sour instantly. Rather than waiting overnight for the bacteria, you can hit your target pH during your standard mashing process. It can also be added to any recipe to adjust pH in the mash, similar to acidulated malt. This traditional ingredient, imported directly from Japan, is a great addition to your next craft Japanese rice lager! Koji (Aspergillus luchuensis) is a fungus that is grown on rice during the Shochu making process and citric acid is naturally generated. Koji is grown on rice which breaks down starch in the rice to a more fermentable sugar source. Yeast can then use these sugars during fermentation to add a bright and refreshing citric acid character. White Koji should be used at a rate of 20% - 25% of total grain in your recipe for souring.     These Organic Hard Red Wheat Berries are grown in the Pacific Northwest. Wheat berries are an unmalted wheat that have a strong grain flavor, and a very light straw color. Unmalted wheat is used in many traditional Belgian styles to add flavor and cloudiness, and improve head formation. The starch in raw grain is not gelatinized and the protein content is high. Depending upon use, a cereal mash and/or protein rest may be required. Wheat berry crops are either “spring” or “winter” crops. Typically the harder the berry, the higher the protein content. Since spring wheat generally has higher protein (i.e. gluten) and gluten is what allows dough its shape, elasticity, and rise; hard red spring wheat tends to be a better flour choice for sandwich-style bread. Winter red is wonderful for mixing with other types of flour to produce Old World style breads.

    Gambrinus Rye Malt is a welcome addition to a wide range of beer styles and spirit mashbills, where it supplies spicy, grainy, and bready notes with suggestions of vanilla and sweet dough, as well as enhanced mouthfeel. Brewers love the subtle cracked-pepper spiciness that even small percentages of this malt bring to IPA, red ale, blonde ale, saison and grisette, Scotch and Irish ale, amber lagers, stout, or porter. When used as a larger proportion of the grist for traditional Roggenbier or rye beers, expect more dominant bready, spicy, and grainy overtones with a hint of vanilla. Gambrinus Rye Malt is a great addition for a Hazy IPA to amplify mouthfeel, viscosity, and head retention in conjunction with flaked oats or wheat. Because of the combination of high beta glucans and no husk, we recommend the use of rice or oat hulls to improve lautering and reduce the risk of a stuck mash.
