B64 Napoleon - Imperial Yeast
Classic strain to produce French Saison where a balance of fruit esters and spicy phenols are necessary. This yeast is an insane wort attenuator. Napoleon will destroy the sugars in your saison and farmhouse beers – even the ones in which most brewer’s strains have no interest. When all is said and done, Napoleon produces very dry, crisp beers with nice citrus aromas balanced by subtle black pepper phenols. Yeast settling times can be long, usually requiring filtration for bright beers. This strain tests positive for the STA1 gene via PCR analysis and is therefore considered to be Saccharomyces cerevisiae var. diastaticus Specifications: Temperature Range: 65–78F (18–26C) Flocculation: Low Attenuation: 77-83% Alcohol Tolerance: 12% Species: Saccharomyces cerevisiae var. diastaticus We ship all liquid yeast with an ice pack and insulated bubble envelope. Beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.

Pickle Pebbles - Glass Fermentation Weight - Wide Mouth
By popular demand, Pickle Pebbles PLUS+ offer the same quality as the best-selling Pickle Pebbles, but in a size designed for use with wide mouth canning jars. Pickle Pebbles PLUS+ will fit perfectly in any wide mouth jar and are twice as heavy as regular Pickle Pebbles. Pickle Pebbles have been specifically designed for use with fermentation and take the guess work out of your lacto ferments by ensuring your veggies stay below the surface of the brine thereby eliminating exposure to oxygen (which is the main cause of failure when using lacto fermenting methods). Pickle Pebbles can be used in all types of fermenting vessels including mason jars (both regular and wide mouth), the Fido style jar, as well as traditional ceramic crocks. While a single Pickle Pebble is often enough to keep veggies below the brine, they can also be stacked to provide extra weight. Pickle Pebbles are made of non-iridized soda glass which is completely inert and guarantees that no other substances leach into your ferment.

Cold Brew Coffee and Tea Maker Stainless Steel Filter Kit
This system includes: --One heavy duty, very fine mesh, dutch weave stainless steel filter that fits a wide mouth (3″ internal diameter) Mason jar. --Two different silicone seals (use one at a time) --One wide mouth stainless steel lid to make everything leak proof and dishwasher safe. Use it to make cold brew coffee or iced coffee concentrate, hot or iced tea, nut milk, infused water or alcohol, or to filter or strain any liquid – all right in the jar! Scroll down for recipes. 2 sizes available to fit Wide Mouth Mason jars: --Quart filter for 32oz or 24oz (Quart & Half) Wide Mouth jars --Half Gallon filter for 64oz Wide Mouth jars Use this filter system to make delicious cold brewed coffee and steep loose leaf tea for the perfect, smooth beverage any time of year! Coffee and tea made through this system is good for you and the environment. Directions: For brewing and steeping: Only use the "wrap around" silicone seal that seals both sides of the metal filter (against glass and lid). This seal is optional if you keep the jar upright. Cold Brew Coffee - To make cold brew coffee concentrate, fill the filter tube about 3/4 full with coarse ground coffee, to allow for swelling. Pour in cold water to fill jar and allow it sit on your counter or in your fridge for 24 hours. Loose Leaf Tea - To steep loose leaf tea, combine 1-2 teaspoons of your favorite tea with 6-8 oz of cold water and place in fridge. Steep white or green tea for 6 to 8 hours; steep black or oolong tea for 8 to 12 hours depending on desired strength. Hot Coffee or Tea - You can also use this filter to make hot coffee and tea. Put the grounds or leaves in the filter, pour in 200 degree water, and wait a few minutes. Once brewing/steeping is complete, remove the filter, dump grounds/leaves into your compost, pour over ice, add your favorite coffee/tea additions and enjoy! For storing: Keep your brewed coffee and tea in your Mason jar fresh and leak proof with the other silicone seal and stainless steel lid included. Helpful tips: Be sure you use coarse ground coffee! A higher quality coffee grinder will give you a more consistent coarse grind. Cheaper grinders produce a mix of coarse all the way down to powdery grinds. The cold brew coffee concentrate will be strong, so you may need to dilute it. Serve it hot or over ice, add sugar or dairy, or any other way you like! To make a more concentrated version, use more coffee grounds or steep for longer. Cold brew coffee is commonly made very strong and diluted at serving time. They are 10cm, 15cm, and 21cm tall. The mesh part is 7cm in diameter. The mesh is 50 micron dutch weave. All parts are dishwasher safe, and I find this the easiest way to clean them.

CellarScience® RED Dry Wine Yeast
Emphasizes red berry fruit flavors High color extraction Makes wines that do not require extended aging Med-High nutrient need Top choice for Zinfandel, Sangiovese, Pinot, Merlot Our most popular red yeast is a perfect choice for Pinot Noir, Zinfandel, Sangiovese, Merlot and other reds where you want to emphasize red fruit flavors. When compared with BIG RED or PURPLE, RED is less about structure and body and more about fruit. Fantastic by itself if you plan to blend separately fermented lots back together. RED is a great choice to contribute red berry flavor. Also known to help produce intense color. Also a great choice for Cabernet, Syrah and other traditinoal big red varietals where you would like to emphasize fruit over structure and body. Because RED ferments cleaner than most yeast at high temperatures, it is the perfect choice if you are fermenting in a warm environment and do not have temperature control. It does not produce much SO2 so it is a great choice for easier ML fermentations Start Time: Average Alcohol tolerance: 16% Nitrogen Demand: Med Yan Requirement @ 23 Brix: 250ppm Production of volatile acidity: low Production of SO2: Low Ease to Ferment with MLF: Good Yeast Type: Cerevisiae Killer Factor: Neutral Malic Acid Consumption: AverageOptimal Fermentation Temp: 65–85°F Proper yeast hydration helps ensure a healthy fermentation. For every gram of yeast, mix .25 g of FermStart yeast nutrient with 25 ml of sterilized tap water between 104–106°F/40–41°C. When water reaches 104°F/40°C, sprinkle yeast into water and stir gently. Allow the slurry to stand undisturbed for 15 minutes and then stir again. For every gram of yeast used add 25 ml of clean must to the yeast slurry and let stand 15–20 minutes. If necessary, use additional must to adjust yeast slurry to within 18°F of must temp before pitching. For a complete nutrient schedule sufficient for most fermentations, add 1.5 g of FermFed DAP Free per gallon of must at the first sign of fermentation and 1 g of FermFed per gallon of must after 1/3 sugar depletion.
