    PBW is an alkaline, non-caustic, environmentally and user friendly cleaner.P.B.W. is a buffered alkaline detergent that has been proven to be more than an effective substitute for caustic soda cleaners. Because of its unique formulation of buffers and mild alkalis, it is safe on skin as well as soft metals such as stainless steel, aluminum, and on plastics. P.B.W. uses active oxygen to penetrate carbon or protein soils and is not effected by hard water. The oxygen also helps in reducing B.O.D. and C.O.D. in wastewater, which is an added environmental benefit.P.B.W. has been formulated as a C.I.P. cleaner and is very effective in removing protein soils found on brew kettles, fermenters, conditioning tanks, filters and all packaging areas. The concentrations to remove these soils are typically in the 1% range. However, due to soil and water conditions this concentration will vary. To help in hard water areas P.B.W. has been formulated with enough chelators to tolerate hard water over 17 grains.

    A 7.9 gal (30 L) food-grade plastic bucket. Ideal for all fermentations, but especially ideal for wine kits, beers that tend to have a high krausen (hefe) and any fermentation that is slightly too large for your 6 gallon pail. The smooth walls are easier to clean compared with other blow molded fermenters that have quite porous walls. Why Polypropylene?   These buckets are made from polypropylene as it is less porous and significantly smoother than other HDPE fermenters. HDPE is porous and can harbor microbial activity making it more difficult to clean and sanitize. Being less porous, polypropylene also does not absorb aroma like HDPE so there is less flavor carry over from batch to batch.   Note: These buckets come molded with a threaded hole for a spigot to screw into. We recommend the Italian bottling spigot.   Please note: the spigot hole comes pre-molded into the bucket and needs to be drilled out before installing the spigot. It is recommend using a 5/8" drill bit, taking care not to strip the female threads that accept the spigot. The spigot includes a back nut that won't be needed—simply remove the back nut and thread in the spigot with the gasket in between the neck of the spigot and the bucket. The lid forms a very tight seal and requires a decent amount of downward force to lock in place. Lid sold separately.

    Whirlfloc® T kettle coagulant and fining agent is a purified, high molecular weight carrageenan powder extracted from Irish Moss algae, put in a convenient tablet form. It reacts with colloidal, haze promoting material in the wort to accelerate the formation of dense and compact trub during the hot and cold wort breaks. Whirlfloc binds with the trub and is removed with that material by settling or filtration before the beer is finished. It does not remain in the beer. This saves time, boosts wort recovery, and results in a brighter wort. Improved wort clarity with Whirlfloc T leads to cleaner fermentation and easier filtration afterward. Recommended Usage: For 5 gallons, add 0.2-0.4 tablets to the boiling kettle, 10 minutes before the end of boiling. Occasionally as much as a 1 full tablet is required, especially in low-pH brews.Tablets do not need to be hydrated and should dissolve rapidly. If problems occur, the tablet may be crushed prior to use.

    Potassium Metabisulfite is a common additive used to preserve and stabilize wines, ciders, and occasionally beers. When added to wine or must, it forms sulfur dioxide gas (SO2). This prevents most wild microorganisms from growing and acts as a potent antioxidant, protecting both the color and delicate flavors of wine. Potassium Metabisulfite solutions are also used as sanitizing rinses for winemaking equipment. Recommended usage: Dosage varies when used to kill wild bacteria in must, halt fermentation, or preserve finished wines against oxidation. The addition of ¼ teaspoon of potassium metabisulfite to 5 gallons contributes approximately 50 ppm of free SO2. To make a sanitizing rinse for equipment, dissolve 8 teaspoons of potassium metabisulfite into 1 gallon of water. High concentrations of sulfur dioxide gas are irritating and toxic, so use in a well ventilated area. After applying the solution to your equipment, the items must be rinsed with clean, cold water.

Recommended for the production of sparkling wines processed by Traditional or Charmat methods. Dosage 0.76 to 1.14 grams per gallon 20 to 30 g/hl (Average: 2,2 lbs. per 1,000 gal.) Recommendations of usage Pour the desired quantity of yeast in 10 times its weight of tap water at 30-35°C in a wide vessel. Cover all the water surface area by creating a thin layer of yeast. Let it rest for 20 minutes. Gently stir to complete the yeast rehydration and avoid the formation of clumps. Slowly double the volume of the yeast suspension by adding must from the tank while stirring in order to decrease the temperature of the yeast starter and to start the activation of the yeast. The difference of temperature between the rehydrated yeast and the tank should not exceed 10°C, optimum being 5°C. Let it rest for another 10 minutes. Homogenize and incorporate the yeast starter to the must. Storage The shelf life of unopened vacuum packets at room temperature (20°C, 68°F) is up to 4 years. After opening, use within 4 weeks. Store an opened package tightly sealed, under refrigeration, removing as much air as possible. Red Star® products comply with the Oenological Codex, until the Best Before End Date, in the storage conditions mentioned here above. Formerly known as Champagne.
