Hallertau Mittelfruh Pellet Hops
Breeding/Development: Germany. The signature landrace variety of the Hallertau region in Bavaria, Hallertau Mittelfrüh is, at least to some, the epitome of noble hops. Brewing Application: Aroma. Although it can be and is used throughout the boil, it is most prized for its fine, elegant aroma and flavor contribution. Mittelfrüh has been one of Europe’s most widely esteemed varieties for centuries and is practically synonymous with continental lagers (particularly Bavarian styles) and many types of German and Belgian ales. Sensory: Complex, but mild and approachable. A mixture of sweet, earthy,and herbal with vivid impressions of new-mown hay, sweet spices, and dried flowers. Motueka Pellet Hops
Motueka from New Zeland is the result of a breeding program aimed at creating novel aroma hops that impart unique flavors to beer. Against a background character reminiscent of its Saazer parent, Motueka offers vivacious notes of lemon, lime, and tropical fruits. The moderate alpha acid (6.3-7.4%) levels make it suitable for a wide range of applications, and it produces excellent results when employed in multiple additions. It offers a balanced bitterness that integrates well with high gravity brews and nicely compliments strong malt characteristics like sweetness and body. While typically used in traditional pilsners and Belgian ales, Motueka is gaining popularity in the American craft brewing scene. Nelson Sauvin™ (NZ) Pellet Hops
A high alpa acid hop (11-14%) from New Zealand. Nelson Sauvin is a highly prized, dual-purpose hop that has been used in a wide range of styles by craft brewers. It has a distinctive aroma, similar to Sauvignon Blanc wine or crushed gooseberries. Notes of passionfruit and tangerine are apparent as well. Nelson Sauvin has a low cohumulone content, which imparts a smooth bitterness.

Perle (German) Pellet Hops
Origin: Germany. Bred at Hüll from English Northern Brewer stock, Perle became extremely popular with German growers and brewers after its release in 1978. Usage: Aroma, but in an excellent year can have high enough alpha content for use as bittering as well. Its combination of delicacy and brightness go well with the clean flavors of European lagers and cold-fermented ales, as well as the yeast character of many Belgian beers. Some brewers also find nontraditional use for its flavors in blends for pale ale and other hoppy warm-fermented styles.
