In whites with higher levels of terpenes and thiols (e.g. Sauvignon Blanc and Viognier) GSH helps preserve fruity/floral aromas. It is also particularly helpful to produce natural wines or wines with less SO2. Benefits: Protects against oxidation Preserves Terpenes, Esters, and Thiols (3MH, 3MHA) during aging Reduces need for SO2 Improves color stability How it Works:Quinones are a class of compounds that can degrade wine by causing oxidizing reactions that lead to browning and the loss of desirable varietal flavors. Terpenes and Thiols are particularly prone to interact with Quinones. Instead GSH reacts with Quiniones creating a stable compound that does not lead to browning and a loss of flavor and aroma. GSH is a natural compound found in yeast cells and acts as a natural anti-oxidant that can be used in conjunction with SO2 or by itself in the case where the winemaker chooses to use low or zero quantities of SO2. GSH Naturale contains a high percentage of tripeptide glutathione along with other polysaccharides that have a positive impact on body, flavor, aroma. Usually used in conjunction with SO2 as an additional natural inhibitor of browning, GSH Naturale will have positive impact on color, wine, thiol, esters and terpene content throughout the aging process. Use:Add 0.4 to 1.5 grams per gallon (0.1 to 0.4 g per liter) directly into the wine. We recommend starting with a dosage of 1 g per gallon (0.25 g per liter) and adjusting as desired in future batches.

Place in glass, wood, or food safe HDPE plastic w/a removable top or holes allowing for aeration. Cover holes or open top w/cheesecloth or gauze to prevent insect infestation. Allow to sit 6-12 weeks. Best growth is in temperatures of 80-85 degrees Fahrenheit. You can reuse the new mother that grows on the top of your vinegar. Tri-clamp fittings are standard fare in professional breweries, and they’ve been widely adopted in homebrewing as T.C. fermenters and pumps become more affordable and widely available. Tri-clamp fittings, also known as Tri-clover, allow you to make a sanitary connection that is free of nooks and crannies for contaminants to take hold. They are much easier to break down for cleaning compared to threaded connections, and they don’t require Teflon tape to make a watertight seal. T.C. fittings and accessories also give you the distinct advantage of being able to clean in place (CIP), so you don’t need to break down your entire system after every brew day.     The main purpose of a perforated pizza peel is to get rid of excess flour from the pizza base. But why do you want to get rid of the flour? When you’re baking pizza on hot stone or steel, you don’t want flour on the baking surface because it burns. Fine wheat flours that are most commonly used for baking pizza burn at fairly low temperatures. It’s this flour that causes trouble. Dusting your pizza peel with semolina flour, which can handle higher heat better, can also help. Burnt wheat flour will make the oven smoky and will result in more cleaning work when you’re done baking. The burnt flour tends to stick and can be a real pain to get rid of. Especially on an unglazed pizza stone. And if you’re not able to clean the stone properly, the flour can keep smoking next time you use the stone. Less Contact Surface – Less StickingA perforated peel has a smaller surface that is in contact with the pizza dough. This means pizza is less likely to stick to a perforated pizza peel. The reason is that the larger the contact surface is, the more friction there will be between the peel and the pizza. And more friction means it is more likely to stick. A smaller contact surface also means that you’ll need less flour when you’re dusting the peel. As noted above, you want as little flour as possible in the hot oven. So in addition to removing more flour from the dough itself, the peel need less flour due to the holes. Perforated pizza peels are also lighter than solid pizza peels, due to less metal on the carrying surface. This will make it easier to use the peel. Less Condensation – Crispier Pizza CrustWhen you take a hot pizza out of the oven, you may have noticed that water sometimes is formed under the pizza. This moisture makes the pizza less crispy, or even soggy. Using a solid pizza peel may create condensation when the hot pizza meets the cold (room temperature) surface. This is mostly a problem with metal peels since hot air is trapped between the pizza crust and the smooth carrying surface. Condensation happens when this hot air is cooled down to a certain point (it’s dew point), and water drops are created. When you’re using a perforated pizza peel, on the other hand, you will experience less condensation. The reason is that the holes let the hot air escape through the peel.
