Gluten-Free Brewing: Techniques, Processes, and Ingredients for Crafting Flavorful Beer

    Out of stock

Gluten-Free Brewing: Techniques, Processes, and Ingredients for Crafting Flavorful Beer By: Robert Keifer The ubiquity of gluten-containing grains, such as barley, wheat, and rye, in modern-day brewing has prevented many potential consumers from fully enjoying the craft beer revolution. Individuals who have celiac disease, non-celiac gluten intolerance, or gluten sensitivity (as well as those who simply feel better when they avoid gluten) have historically been unable to enjoy today’s characterful beers. But many other types of grain can be used to brew beer of all styles; such alternative grains greatly expand the options available to beer lovers and brewers who cannot or choose not to ingest gluten, or those who just want to experiment with new and interesting flavors. Gluten-Free Brewing includes a discussion of available gluten-free ingredients, how to source them, and how to malt them. Explore the world of ancient grains and adjuncts and learn how today’s malted and roasted varieties can be used to brew to-style beers. Learn about different mashing techniques, when to use them, what additional ingredients and enzymes can help throughout the brewing process, and how they can deliver specific flavors in your beer. Take a deep dive into recipe formulation and fermentation challenges, as well as flavor, body, head retention, and color considerations when using these not-so-alternative grains to create mainstream flavors. More than 30 tested recipes are included to help brewers explore British, German, Belgian, New World, and ancient-style beers. Gluten-Free Brewing will teach you how to brew full-flavored, world-class gluten-free beers.

  • Go-Ferm Protect

    Go-Ferm Protect

    34 in stock

Go-Ferm Protect is a new formulation of Go-FermGo-Ferm Protect is a natural yeast nutrient that is added to the yeast hydration water before adding your selected yeast strain. Its complex formula provides your yeast with the proper sterols, unsaturated fatty acids and micronutrients needed to begin fermentation in optimal shape. The great thing about Go-Ferm Protect is that the proper nutrients and vitamins are introduced BEFORE the yeast is added to the must. This way 100% of the nutrients are available to your selected yeast strain and won't be stolen away by any indigenous yeast or bacteria that may be present in the must before your yeast can become established.New Advanced Formula!Go-Ferm Protect was created as a result of a multi-year study of problem fermentations by Lallemand and the National Agricultural Research Institute (INRA) in France. During this period, they looked at the adverse effects on the yeast from overripe fruit (>28 Brix), low nutrient levels, over clarification of the juice and poor fruit quality (Botrytis, rot, high bacteria count, insecticide and fungicide residue). Their research showed that musts deficient in sterols and unsaturated fatty acids made yeast more susceptible to ethanol toxicity (high alcohol), osmotic shock (high sugar), temperature and others stress factors. In response to this data they created the NATSTEP (NATural STErol Protection) process that incorporated sterols, unsaturated fatty acids, as well as vitamins and minerals into an advance yeast rehydration nutrient: Go-Ferm Protect.Go-Ferm Protect provides a combination of protective and nutritional benefits that ensure your yeast begins your fermentation in peak form! The best part is that if your fruit is in great shape then Go-Ferm Protect will simply help your yeast out that much more!Go-Ferm Protect does not contain any DAP, as DAP is harmful to the yeast during the rehydration process. GO-Ferm is usually used in conjunction with  Fermaid K yeast nutrient; where Go-Ferm Protect is used at yeast hydration then Fermaid K is added at the first signs of fermentation and again after 1/3 sugar depletion. To UseUse at a rate of 1.25 g Go-Ferm Protect per 1 g of yeast. A rough approximation of weight is 1 tsp = 3.2 grams. It is highly recommend using a scale to weigh the product for an accurate dose. It is not recommend relying on these rough conversions for accurate dosage rates.

Natural cork is the traditional and preferred cork of professional winemakers across the globe. "DEFINITIVA" corks provide the ultimate whole natural cork at a spectacular price. These grade 0 corks (rated from 0-10, 0 being best) are a great option for most bottlings, including extended aging (5-20 years). 24mm X 44mm, #9 x 1.75". Fits standard cork finish (neck) bottles. Italy produces more wine than any country in the world and Molinas is the largest Italian cork supplier with over 1 billion corks produced annually. Molinas Cork was started over 100 years ago by Pietro Molinas on the Italian island of Sardinia. Besides its beautiful beaches and designation as one of the world's five Blue Zones, Sardinia is known for its large, government protected Cork tree forests. Today, the 4th generation of the Molinas family sustainably harvests cork from these protected trees. Compared to most cork available in the market, the bark is allowed to mature an additional year. This leads to a less porous, higher quality cork, and has less impact on the forest. Throughout the entire process from tree to finished cork, quality control is strictly monitored. Grain Millers Flaked White Wheat

    75 in stock

Flaked White Wheat offers the benefits of unmalted wheat in a convenient flaked form. Unmalted wheat has a strong grain flavor, and a very light straw color. It is used in many traditional Belgian styles to add flavor and cloudiness, and improve head formation. Unlike raw, whole grains, the starch in flaked wheat is pre-gelatinized, so a separate cereal mash is usually unnecessary. However, the protein content is high. Depending upon use, a protein rest may be required. Use in the production of Belgian Wit beers. Use up to 40% as a cereal adjunct in the total grist. Use 0.5-1.0% to a standard brew to increase foam stability. 50 pound bags also available.
