This is perfectly characteristic of this strain. Medium to High Attenuation and Medium Flocculation Fruity aroma, notably tropical and stone fruit The optimal temperature range for LalBrew™ New England yeast when producing traditional styles is 15°C (59°F)* to 22°C (72°F) Lag phase can be longer compared to other ale strains, ranging from 18-36 hours Lag phase, total fermentation time, attenuation and flavor are dependent on pitch rate, yeast handling, fermentation temperature and nutritional quality of the wort. USAGE The pitch rate will affect the fermentation performance and flavor of the beer. For LalBrew™ New England yeast, a pitch rate of 100g per hL of wort is sufficient to achieve a minimum of 1 million viable cells/mL. More stressful fermentations such as high gravity, high adjunct or high acidity may require higher pitch rates and additional nutrients to ensure a healthy fermentation. REHYDRATION Rehydration of LalBrew™ New England in sterile water is recommended prior to pitching into wort in order to reduce stress on the cell as it transitions from dry to liquid form. For many fermentations, this stress is not significant enough to affect fermentation performance and flavor, so good results may also be achieved when pitching dry yeast directly into wort. We highly recommend rehydration in harsher fermentation conditions such as high gravity or sour wort where the added stress of dry-pitching is more likely to have a greater impact on the finished beer. Use of a rehydration nutrient such as Go-Ferm Protect Evolution has been shown to improve fermentation performance for difficult fermentations. Rehydration guidelines are quite simple and present a much lower risk of contamination than a starter, which is unnecessary when using the recommended pitch rate of dried active yeast. Sprinkle the yeast on the surface of 10 times its weight in clean, sterilized water at 30-35°C (86-95F). Do not use wort, or distilled or reverse osmosis water, as loss in viability may result. Stir gently, leave undisturbed for 15 minutes, then stir to suspend yeast completely. Leave it to rest for 5 more minutes at 30-35°C. Without delay, adjust the temperature to that of the wort by mixing aliquots of wort with the rehydrated yeast. Wort should be added in 5 minute intervals and taking care not to lower the temperature by more than 10°C at a time. Temperature shock of >10°C will cause formation of petite mutants leading to extended or incomplete fermentation and possible formation of undesirable flavors. Do not allow attemperation to be carried out by natural heat loss. This will take too long and could result in loss of viability or vitality. Inoculate without delay into cooled wort in the fermenter. LalBrew™ New England yeast has been conditioned to survive rehydration. The yeast contains an adequate reserve of carbohydrates and unsaturated fatty acids to achieve active growth. It is unnecessary to aerate wort upon first use. STORAGE LalBrew™ New England yeast should be stored in a vacuum sealed package in dry conditions below 4C° (39°F). LalBrew™ New England will rapidly lose activity after exposure to air. Do not use 500g or 11g packs that have lost vacuum. Opened packs must be re-sealed, stored in dry conditions below 4°C (39°F), and used within 3 days. If the opened package is re-sealed under vacuum immediately after opening, yeast can be stored below 4C° (39°F) until the indicated expiry date.     The Nukatap Counter Pressure Bottle Filler is a great way to fill bottles directly from your taps without compromising your kegged beer’s flavor, aroma or carbonation levels. It's completely made from stainless steel with no aluminum or brass components. This enables you to use a wide range of chemicals for cleaning this device without the risk of damaging the device or accessories. It's very compact and will fit any tap with 10.0 mm inner diameter spout/nozzle or with a 3/8" thread. To use this device simply connect CO2 gas line to the filling unit and away you go. The integrated counter pressure relief valve gives you good control of the counter pressure and thus the filling speed. How fast the bottle can be filled without too much foaming depends on CO2 level, beer temperature and bottle temperature. This cannot be used with taps with a vent hole but will fit pretty much all forward-sealing taps on the market such as the Nukatap SS, Nukatap FC, Intertap, Perlick 600-series and other brands. This unit is designed to fill multiple sizes of beer bottles up to 500 mL thanks to the telescopic filling stem. We recommend starting with it fully extended, then insert the stem till your at the bottom of the bottle, purge the bottle with CO2, then press the stem all the way in to form a seal on your bottle. For compact portable systems and home draft systems, a slower flow rate is easier to control and further reduces foaming issues due to the low liquid volume stored in the body of the faucet. The NukaTap Mini is also more ideal for pouring smaller doses. For example, cocktails where 5-8 oz of liquid is dispensed is difficult to control with a high flow rate tap. For portable systems, the NukaTap Mini with the Flow Control Ball Lock QD & Duotight Adapter assembly is small enough to literally put in your pocket, making it ideal for mini keg setups that you want to be portable or that you want to easily fit inside a domestic fridge where space is tight. Forward SealingForward sealing faucets are absolutely the way to go when it comes to beer taps. Old legacy taps still exist in the industry that are simply poorly designed. The issue with rear sealing faucets is that beer dries up on the internal piston. Aside from being unsanitary, as more and more beer dries up in these components the faucet can almost glue completely shut causing damaged seals or broken handles (this is particularly the case if it's left for some time to dry out with beer inside). These older legacy designs still exist probably due to poor education. The forward sealing designs do not have this problem and the tap drains out completely with no beer drying up on the mechanical moving parts in the same way. This makes the tap more sanitary and reduces maintenance. In many instances the price is similar so there is no reason to use a poorly designed rear sealing faucet. All NukaTap faucets are forward sealing. Laminar FlowJust like the NukaTap SS and NukaTap FC, the NukaTap Mini has been designed with laminar flow in mind. Laminar flow is critical for a beer tap as it means you will pour the beer with minimal foaming and a substantial reduction in wastage. Think about how many times a beer faucet opens and closes in its lifetime. 1,000 or maybe 10,000 times?  Laminar flow saves wasted beer in excessive foam and the better laminar flow easily pays for itself in a reduction in lost beer. To use poorer designed faucets is essentially flushing money down the sink. Extensive modeling has been done on the NukaTap design to improve laminar flow. Integrated Seals That Are Indestructible and More SanitaryUnlike other designs, the NukaTap Mini body is made from Polyketone (POK) making it strong, robust, and able to be autoclaved. The seals are also over-molded from Santoprene® making them hard wearing so they will literally last for the lifetime of the tap without the need for replacement. Santoprene® and POK both have excellent resistance to chemicals such as caustic soda, peroxide, phosphoric acid, lactic acid, citric acid, acetic acid, and all common chemicals sold and used in the beverage industry. The seals internally are over-molded meaning no fissures or cracks exist for bacteria, crud, or yeast to hide. Superior First Pour Foam Due to Low Thermal Mass and ConductivityFirst pour foam is an issue caused by a warm tap body. For most faucets to pour well it's important to dispense enough beer to cool the tap body down to reach maximum performance. In addition to this the conductivity of the tab body also makes this worse so insulative materials simply work better than conductive materials. The NukaTap mini not only has very low thermal mass but is also highly insulative being made mostly from Santoprene® and POK. The combination of these two factors in conjunction with superior laminar flow makes for the lowest "first pour foam" effect out of any tap ever produced. Long Shank AlternativeMost conventional beer faucets require a large 3/4" hole to be drilled through the side of your refrigerator, keezer, or cold box wall. Traditional long shanks also generally have a large volume of liquid that sits inside the wall unrefrigerated which is not ideal. New long shank alternatives developed for the NukaTap Mini are designed to suit any wall thickness and greatly reduces the stagnant beer sitting in the shank itself. For walls up to 2.7" thick, these wall mount shank kits include three screws, however if the wall is thicker, you can also use 6 small wood screws or something similar and attach three screws from the front and 3 from the back allowing you to go into any wall type. Another advantage of this new design is the tap will never accidentally rotate. Typically, other long shank beer taps rely on the hex nut on the shank to be done up tight enough to prevent rotation but if the wall compresses (often the case with foam walls) the tap is allowed to rotate. This new design has three fixing points making it impossible for the tap to rotate accidentally as the interlocking teeth behind the collet allow you to set the angle and then do up the collet to fix the tap permanently in that position.

This is not sanitary and as more and more beer dries up in these components the tap can almost glue completely shut causing damaged seals or broken handles (this is particularly the case if it's left for some time to dry out with beer inside).  These older legacy designs still exist probably due to poor education. The forward sealing designs do not have this problem and the tap drains out completely with no beer drying up on the mechanical moving parts in the same way. This makes the tap more sanitary and reduces maintenance. In many instances the price is similar so there is no reason to use a poorly designed rear sealing tap. All NukaTap faucets are forward sealing. Laminar FlowJust like the NukaTap SS and NukaTap FC, the NukaTap Mini has been designed with laminar flow in mind. Laminar flow is critical for a beer tap as it means you will pour the beer with minimal foaming and a substantial reduction in wastage. Think about how many times a beer tap opens and closes in its lifetime. 1,000 or maybe 10,000 times?  Laminar flow saves wasted beer in excessive foam and the better laminar flow easily pays for itself in a reduction in lost beer. To use poorer designed taps is literally like flushing money down the sink. Extensive modeling has been done on the NukaTap design to improve laminar flow. Integrated Seals That Are Indestructible and More SanitaryUnlike other designs the NukaTap Mini body is made from POK making it strong, robust and able to be autoclaved. The seals are also over-molded from Santoprene® making them hard wearing so they will literally last for the lifetime of the tap without the need for replacement. Santoprene® and POK both have excellent resistance to chemicals such as caustic soda, peroxide, phosphoric acid, lactic acid, citric acid, acetic acid, and all common chemicals sold and used in the beverage industry. The seals internally are over-molded meaning no fissures or cracks exist for bacteria, crud or yeast to hide. Superior First Pour Foam Due to Low Thermal Mass and ConductivityFirst pour foam is an issue caused by a warm tap body. For most taps to pour well it's important to dispense enough beer to cool the tap body down before the tap will pour well.  In addition to this the conductivity of the tab body also makes this worse so insulative materials simply work better than conductive materials. The NukaTap mini not only has very low thermal mass but is also highly insulative being made mostly from Santoprene® and POK. The combination of these two factors in conjunction with superior laminar flow makes for the lowest "first pour foam" effect out of any tap ever produced. Long Shank AlternativeMost conventional beer taps require a large 3/4" hole to be drilled through the wall of your refrigerator, keezer, or wall. Traditional long shanks also generally have a large volume of liquid that sits inside the wall unrefrigerated which is not ideal. This new long shank alternative is designed to suit any wall thickness and greatly reduces the stagnant beer sitting in the shank itself. For walls up to 2.7" thick, these wall mount shank kits include three screws, however if the wall is thicker, you can also use 6 small wood screws or something similar and attach three screws from the front and 3 from the back allowing you to go into any wall type. Another advantage of this new design is the tap will never accidentally rotate. Typically, other long shank beer taps rely on the hex nut on the shank to be done up tight enough to prevent rotation but if the wall compresses (often the case with foam walls) the tap is allowed to rotate. This new design has three fixing points making it impossible for the tap to rotate accidentally as the interlocking teeth behind the collet allow you to set the angle and then do up the collet to fix the tap permanently in that position.

It has high bio-adsorptive properties for short and medium chain fatty acids and fungicides which can cause problem fermentations. Saturated fatty acids modify the yeast sugar transport capacity by interfering with the membrane sugar transport proteins. When used during fermentation it can help minimize the risk of sluggish or stuck fermentations. It can also be used to help restart a sluggish or stuck fermentation. It is OMRI listed.
