    Mini Design - Ideal Flow Rate for Small SystemsMost conventional beer taps are designed with 10mm diameter nozzle/spout so you can pour a pint in just over 10 seconds. This type of flow rate is great for high turnover bars and commercial venues but this high flow rate requirement is not necessary or desirable for all applications.  For compact portable systems, or for home brew draft systems a slower flow rate is easier to control the flow and further reduces foaming issues due to the low liquid volume stored in the tap body.  This NukaTap mini is also more ideal for pouring smaller doses. For example cocktails where 5-8 oz of liquid is dispensed is difficult to control with a high flow rate tap. For portable systems, the NukaTap Mini with the Flow Control Ball Lock QD & Duotight Adapter assembly is small enough to literally put in your pocket, making it ideal for mini keg setups that you want to be portable or that you want to easily fit inside a domestic fridge where space is tight. Forward SealingForward sealing taps are absolutely the way to go when it comes to beer taps. Old legacy taps still exist in the industry that are simply poorly designed. The issue with rear sealing taps is that beer dries up on the tap piston. This is not sanitary and as more and more beer dries up in these components the tap can almost glue completely shut causing damaged seals or broken handles (this is particularly the case if it's left for some time to dry out with beer inside).  These older legacy designs still exist probably due to poor education. The forward sealing designs do not have this problem and the tap drains out completely with no beer drying up on the mechanical moving parts in the same way. This makes the tap more sanitary and reduces maintenance. In many instances the price is similar so there is no reason to use a poorly designed rear sealing tap. All NukaTap faucets are forward sealing. Laminar FlowJust like the NukaTap SS and NukaTap FC, the NukaTap Mini has been designed with laminar flow in mind. Laminar flow is critical for a beer tap as it means you will pour the beer with minimal foaming and a substantial reduction in wastage. Think about how many times a beer tap opens and closes in its lifetime. 1,000 or maybe 10,000 times?  Laminar flow saves wasted beer in excessive foam and the better laminar flow easily pays for itself in a reduction in lost beer. To use poorer designed taps is literally like flushing money down the sink. Extensive modeling has been done on the NukaTap design to improve laminar flow. Integrated Seals That Are Indestructible and More SanitaryUnlike other designs the NukaTap Mini body is made from POK making it strong, robust and able to be autoclaved. The seals are also over-molded from Santoprene® making them hard wearing so they will literally last for the lifetime of the tap without the need for replacement. Santoprene® and POK both have excellent resistance to chemicals such as caustic soda, peroxide, phosphoric acid, lactic acid, citric acid, acetic acid, and all common chemicals sold and used in the beverage industry. The seals internally are over-molded meaning no fissures or cracks exist for bacteria, crud or yeast to hide. Superior First Pour Foam Due to Low Thermal Mass and ConductivityFirst pour foam is an issue caused by a warm tap body. For most taps to pour well it's important to dispense enough beer to cool the tap body down before the tap will pour well.  In addition to this the conductivity of the tab body also makes this worse so insulative materials simply work better than conductive materials. The NukaTap mini not only has very low thermal mass but is also highly insulative being made mostly from Santoprene® and POK. The combination of these two factors in conjunction with superior laminar flow makes for the lowest "first pour foam" effect out of any tap ever produced. Long Shank AlternativeMost conventional beer taps require a large 3/4" hole to be drilled through the wall of your refrigerator, keezer, or wall. Traditional long shanks also generally have a large volume of liquid that sits inside the wall unrefrigerated which is not ideal. This new long shank alternative is designed to suit any wall thickness and greatly reduces the stagnant beer sitting in the shank itself. For walls up to 2.7" thick, these wall mount shank kits include three screws, however if the wall is thicker, you can also use 6 small wood screws or something similar and attach three screws from the front and 3 from the back allowing you to go into any wall type. Another advantage of this new design is the tap will never accidentally rotate. Typically, other long shank beer taps rely on the hex nut on the shank to be done up tight enough to prevent rotation but if the wall compresses (often the case with foam walls) the tap is allowed to rotate. This new design has three fixing points making it impossible for the tap to rotate accidentally as the interlocking teeth behind the collet allow you to set the angle and then do up the collet to fix the tap permanently in that position.

    Tempeh Starter Culture (Rhizopus Oligosporus) Make your own high-protein meat substitute with our Tempeh Starter Culture. An Indonesian staple, Tempeh is very versatile and can be flavored and used in many ways. Tempeh is a traditional Indonesian food made from fermented soybeans. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. A fungus, Rhizopus oligosporus or Rhizopus oryzae, is used in the fermentation process and is also known as tempeh starter.It is especially popular on the island of Java, where it is a staple source of protein. Like tofu, tempeh is traditionally made from soybeans, but it is a whole soybean product with different nutritional characteristics and textural qualities. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber, and vitamins. It has a firm texture and an earthy flavor, which becomes more pronounced as it ages. Can be made with beans, grains, or a mix of the two. Note: A food dehydrator is the best way to maintain the proper temperature (80° to 90° F.) while culturing your Tempeh. Use a thermometer to monitor temperature. You will receive: 2 packets Tempeh starter and instructions You will need: 6-8 quart pot for soaking, then boiling soybeans large bowl colander thermometer kitchen towel, paper towels, or hair dryer to dry beans thoroughly food dehydrator ( or other means of maintaining 85° to 90° F. temp) 3 quart-sized plastic zip bags that have been perforated with pin holes that are 1 inch apart 2 cups dry soybeans ( other dry beans can also be used) 2 tablespoons white vinegar 1 packet Tempeh starter culture (save other packet in freezer for future use) Directions: The beans will need to be dehulled (outer skins removed). Soak the beans overnight or for at least 10-12 hours. Use a pot large enough to allow for the beans to nearly triple in size. Massage the beans with your hands to split & loosen the hulls from the beans. Skim off the hulls as they float to the top. Using the colander, drain off the water & rinse several more times to remove the hulls. Boil the dehulled beans for 1 hour. Drain off the cooking water. Dry the beans by patting them with a clean cloth, paper towels, or using a hair dryer on low. The beans should be dry to the touch. Put the beans in a dry bowl and allow to cool to lukewarm temperature (95° -98° F. ). Add the 2 tbsp. vinegar into beans and mix well. Sprinkle in the starter culture and mix well again. It's very important to distribute the culture throughout the beans. Pack the beans into the plastic bags & seal. The holes will allow the beans to breathe as they ferment. Press the bags firmly until flat, and an even 1 inch or so in thickness. Place the bags in a dehydrator & culture at 85°- 90° F. Sometime between 12 and 24 hours, white spores (mycelium) will spread over & throughout the beans. When this occurs, reduce the heat. The process has begun. When the beans have become a firm mass held together by the spores, the Tempeh is finished. This usually takes 36-48 hours, but can take up to 3 or 4 days. Store your finished Tempeh in the refrigerator for up to 10 days, or in the freezer for 2 months. Tempeh can be marinated & flavored however you'd like, and has endless uses. Ingredients: rice, tempeh culture (rhizopus oligosporus) gluten free, vegan, vegetarian, soy free, non-GMO

Reusable- by reserving a bit from each batch, you can continue to make Buttermilk over & over! Buttermilk is a fermented dairy drink. Traditionally, it was the liquid left behind after churning butter out of cultured cream. Since modern butter in western countries is usually not made with cultured cream, but uncultured sweet cream, most modern buttermilk in western countries is cultured separately. A starter culture helps with this process. Buttermilk is common in warm climates where unrefrigerated milk sours quickly. You will receive: 2 packets of Buttermilk starter culture & instructions. You will need: one quart canning jar or other glass jar coffee filter or paper towel to cover jar, and elastic band to secure cover wooden or plastic spoon 2 cups milk (avoid ultra pasteurized or UHT milk) 1 Buttermilk starter culture packet (save 2nd packet in freezer for future use) Activate your starter culture: 1)Put 2 cups milk in your jar. Add starter packet and stir until well dissolved. Cover with coffee filter & secure with elastic band. 2)Allow to culture at room temperature - 68° to 74° F is ideal. Choose a draft-free spot, out of direct sunlight, where your Buttermilk won't be disturbed. Check after 12 hours to see if it has set. When set, it will have a slightly gelatinous consistency and will pull away from the side of container when it is tipped. If not set, leave for up to another 36 hours, checking every few hours. When set, refrigerate for at least 6 hours. Your Buttermilk is now ready to enjoy. Be sure to reserve some back for your next batch. Making the next batch: 1)Put 3 cups milk in a jar. Add 1/4 cup of your finished Buttermilk ( always reserve some back for your next batch) and mix well. To make larger batches, use the same ratio: 1/4 cup finished Buttermilk per 3 to 4 cups milk. 2)Allow to culture for 12 to 18 hours (faster than when activating starter). Check every few hours until set. Larger amounts will take longer to set. When set, refrigerate for 6 hours. Your cultured Buttermilk is now ready to enjoy as is, or used in all kinds of recipes. 3)Buttermilk can be consumed straight, and it can also be used in cooking. In making soda bread, the acid in buttermilk reacts with the raising agent, sodium bicarbonate, to produce carbon dioxide which acts as the leavening agent.
