  • Burton Water Salts

    Burton Water Salts

    17 in stock

Many English commercial breweries use Burton Water Salts to harden the water, which helps Irish Moss work better to coagulate haze-producing malt proteins, and the harder water also helps provide a crisper hop character. The magnesium provides a vigorous fermentation, and the salt adds an illusion of body to the finished beer. Use 1 to 4 teaspoons per 5 gallons. If you are doing partial or all grain brewing, add at the start of the mash, or add at the start of the boil for extract brews.

  • Buttermilk Starter Culture Buttermilk Starter Culture

    Buttermilk Starter Culture

    3 in stock

Make your own tangy, delicious Buttermilk. An heirloom kitchen staple, Buttermilk cultures at room temperature. Reusable- by reserving a bit from each batch, you can continue to make Buttermilk over & over! Buttermilk is a fermented dairy drink. Traditionally, it was the liquid left behind after churning butter out of cultured cream. Since modern butter in western countries is usually not made with cultured cream, but uncultured sweet cream, most modern buttermilk in western countries is cultured separately. A starter culture helps with this process. Buttermilk is common in warm climates where unrefrigerated milk sours quickly. You will receive: 2 packets of Buttermilk starter culture & instructions. You will need: one quart canning jar or other glass jar coffee filter or paper towel to cover jar, and elastic band to secure cover wooden or plastic spoon 2 cups milk (avoid ultra pasteurized or UHT milk) 1 Buttermilk starter culture packet (save 2nd packet in freezer for future use) Activate your starter culture: 1)Put 2 cups milk in your jar. Add starter packet and stir until well dissolved. Cover with coffee filter & secure with elastic band. 2)Allow to culture at room temperature - 68° to 74° F is ideal. Choose a draft-free spot, out of direct sunlight, where your Buttermilk won't be disturbed. Check after 12 hours to see if it has set. When set, it will have a slightly gelatinous consistency and will pull away from the side of container when it is tipped. If not set, leave for up to another 36 hours, checking every few hours. When set, refrigerate for at least 6 hours. Your Buttermilk is now ready to enjoy. Be sure to reserve some back for your next batch. Making the next batch: 1)Put 3 cups milk in a jar. Add 1/4 cup of your finished Buttermilk ( always reserve some back for your next batch) and mix well. To make larger batches, use the same ratio: 1/4 cup finished Buttermilk per 3 to 4 cups milk. 2)Allow to culture for 12 to 18 hours (faster than when activating starter). Check every few hours until set. Larger amounts will take longer to set. When set, refrigerate for 6 hours. Your cultured Buttermilk is now ready to enjoy as is, or used in all kinds of recipes. 3)Buttermilk can be consumed straight, and it can also be used in cooking. In making soda bread, the acid in buttermilk reacts with the raising agent, sodium bicarbonate, to produce carbon dioxide which acts as the leavening agent. Buttermilk is also used in marination, especially of chicken and pork. Ingredients: organic milk, buttermilk bacteria non-GMO, gluten free, vegetarian, reusable, organic

  • Calcium Carbonate

    Calcium Carbonate

    33 in stock

Calcium carbonate is used to reduce the acidity of wine. It does not require cold-stabilization to force complete precipitation, as does potassium carbonate. However, calcium carbonate is more likely to affect the flavor than potassium carbonate, and may take a few months to fully precipitate. One-quarter ounce (about 4 teaspoons) of calcium carbonate reduces acidity in one gallon by about 0.25%. Foaming may occur because of the production of CO2. Do not use more than one ounce per gallon. Wait 24 hours and rack wine. Calcium carbonate is also used in beer to increase the temporary hardness of water. Traditionally used in English stouts, pale ales and bitters.

Calcium Chloride (hydrated) is used to correct mineral deficiencies in water which is to be used for brewing. It is used in de-mineralized or soft to medium hard water to increase permanent hardness. Calcium Chloride is effective in eliminating the variations in composition often encountered in water from surface sources. It will help establish proper pH of the mash and the wort and provide sufficient calcium ions essential for enzyme function, kettle protein coagulation and yeast metabolism. 1 tsp. of Calcium Chloride per gallon adjusts water hardness by 297 ppm Ca2+ and 531Cl-.

    Carb Stone

If you didn't already know the Spike Conical is a unitank! This means it is designed to handle pressures up to 15psi. This capability allows you to add 15psi of pressure needed to carbonate your beer before transferring to your keg. This will reduce carbonation times from upwards of a week down to less than 24hrs. Spike Brewing's carb stone is designed to attach to the outside of the racking port butterfly valve. This means the carb stone can be installed when you need it and won't be sitting inside the tank during the entire fermentation process. This eliminates the chance for the stone to become clogged. It also has a protective stainless housing which prevents damaging the very brittle 'stone'. Cascade Cryo Hops LupuLN2 Pellets

Cascade CryoHops LupuLN2 Pellets Aroma Specification: fruity, citrusy, herbal Alpha-acids: 9.5-10.5% Total oils: 1.0-2.0 Note: Repacked in oxygen barrier packaged and nitrogen flushed to preserve freshness.DESCRIPTIONLupuLN2 hop powder and pellets are produced from whole leaf hops using YCH HOPS™ proprietary cryogenic separation process that preserves all components of each fraction.LupuLN2 is purified lupulin powder containing most of the resin compounds and aromatic oils derived directly from whole hop flowers. It is ideal for use in the whirlpool or fermenter for imparting intense hop flavor and aroma with minimal vegetal flavor and improved yield. Used in combination with Resinate® CO2 extract, LupuLN2 can add hop aroma and flavor to the end of boil or in dry hopping for a twofold approach to achieving superior brewery efficiency without sacrificing flavor. Depending on how much pellet or whole leaf is replaced by either of these products, breweries may see significant improvements in beer yield which contribute to both the bottom line and sustainability mission of YCH and many of our customers.APPLICATION AND USAGELupuLN2 may be used anywhere pellet hops can be used and are best used for late kettle and dry hop additions. As a starting point for recipe formulation or modification dose rate is estimated at 50% of pelletsby weight. It is best used in beers defined by their hop flavor and aroma with hop loads of at least 1 lb/bbl in late kettle or dry hop additions where a largeryield increase will occur from substituting out pellets or whole leaf.PACKAGINGLupuLN2 is packaged inside nitrogen flushed, flexible, foil pouches and shipped in cardboard cartons.STORAGELupuLN2 should be stored near-freezing, preferably between 30°F and 41°F (-1°C and 5°C). For best results, LupuLN2 should be used within three (3) years of package date. Storage stability does vary per variety and can be negatively affected by exposure to oxygen, heat and/or light.
