Fermentis SafAle™ F-2 25g
SafAle™ F-2 is specifically selected for secondary fermentation in bottle and in cask. This yeast assimilates very little maltotriose but assimilates basic sugars (glucose, fructose, saccharose, maltose) and is characterized by a neutral aroma profile respecting the base beer character. Its neutral aroma profile, high alcohol resistance and stickiness characteristics make it a perfect match for consistent re-fermentation in bottle and cask. SafAle™ F-2 resists to high alcohol levels (>10% v/v) and allows brewers to obtain all the properties of refermentation such as: Beer preservation thanks to oxygen trapping Contribution in roundness and maturation aromas Carbonation Sticks well at the bottom of the bottles/casks and forms a nice haze when it is resuspended Usage Add 5 to 10 grams of sugar per liter of beer (to obtain a saturation of 2.5 to 5.0 g/l of CO2) Pitch the sweetened beer, that should be at fermentation temperature (20-25°C) with the rehydrated yeast. Carbonation will be achieved in 1 to 2 weeks at 20-25°C* At the end of refermentation, the beer can be cooled down and will gain in roundness after 2 to 3 weeks.

Design features Fast easy to read results with large digital LCD readout Lightweight and portable Easy measurement: just place the probe in the sample, gently stir and wait for the reading to stabilize Automatic Temp. Compensation (ATC) Automatic two-point calibration for increased accuracy Extreme accuracy to ±0.02 pH and extended range (-2.00 pH to 16.00 pH) Low maintenance, high performance gel-filled, double junction lab grade pH electrode included Rugged stainless temperature probe 3’ probe cables for extra flexibility Auto shut off and low power demand Approx. 300 hours of continuous use Care and Use pH meters usually start performing poorly because of problems with the probe. The two parts of the pH probe that cause problems are the glass sensing bulb and the reference junction. Sensing bulb The glass bulb loses sensitivity with use and will eventually fail. This is true of all pH probes. Reference junction The reference junction is a small hole that allows the meter to compare the sample to a reference. The reading is generated based on the electrical difference between the sample and reference. If the junction hole gets clogged, the pH electrode will no longer function. You can extend the life of your pH electrode in the following ways. Cleaning and Storage All pH sensors have a limited life and response time gets longer with age. Properly maintaining your pH pen tester will give you fast, accurate results for longer. So, be sure to order the Milwaukee pH Maintenance Kit code PH-Main at checkout time! This will be needed to help clean and condition the pH electrode before use! Storage The pH probe needs to be kept hydrated. Long periods of dry storage will damage the sensitivity of the probe. Allowing the probe to dry out may also result in the junction hole getting clogged. Store the pH probe in storage solution MA9015. Only use tap water short-term if MA9015 is not immediately available and NEVER store in distilled Water (DI) or Reverse Osmosis (RO) water. This will damage the sensitivity of the probe. The best way to store the probe is with the probe's cap filled with storage solution or calibration buffer and the cap tightened to prevent leakage. It is also recommended that to store the electrode upright to further reduce the potential for leakage. Cleaning Residue from the sample can impact the sensitivity of the sensing bulb and clog the junction. This is especially true if the sample has a lot of organic material. We recommend regularly soaking your electrode in cleaning solution MA9016 for about 20 minutes. Calibration The pH sensing bulbs become less sensitive over time so make sure that you are calibrating regularly to keep your PRO Plus pH meter accurate. Also, calibrate after cleaning or a long period of storage. Thank you for considering Milwaukee to help you take your results to the next level.

Purple Corn Cracked - Non-GMO
Cracked, unmalted and unmodified heirloom purple corn is an excellent addition to the mashbill for bourbon or corn whiskey; brewers can use it for color and flavor adjustment in pale lager, traditional cream ale, and other beer styles. In brewing trials, purple corn brought sensory notes of corn chip, honey, and fruit, as well as a red-to-purple hue depending on inclusion rate and recipe. Distilled spirit produced from a base of pale barley malt and purple corn displayed strong fruity, sweet, and almond attributes with undertones of caramel. The main difference between our flaked corn and this product is that the purple corn is not gelatinized. When brewing with purple corn, it’s recommended to follow a cereal mash procedure to gelatinize and liquefy the starches in the unmalted grain. Cereal Mash Procedure In a cereal mash, a small proportion of malt from the grain bill is added to a separate boiling vessel called the adjunct cooker, along with the entire charge of unmalted grain. The malt and grain mixture in the adjunct cooker undergoes a short mash rest followed by boiling, after which it is added to the main mash with the remainder of the malt. Boiling gelatinizes the starch in the unmalted grain, while the malt enzymes help liquefy the gelatinized starch before and during the main mash. As a reference, the following schedule was used to brew a 3 hL batch of purple corn lager at the Rahr Technical Center pilot brewery: Mash Tun Profile and Ingredients Grain bill– 80.00% Rahr Premium Pils, 20.00% Purple Corn Enzyme Additions – Hitempase 2XL – 12 g, Bioglucanase – 15 mL Adjunct Cooker Mash: Mash In 105°F 1st Rest – 105°F for 20 min 2nd Rest – 212°F for 15 min Three Step Mash Mash In 122°F 1st Rest – 122°F for 20 min 2nd Rest – 156°F for 45 min Mash-Off – 171°F for 1 min Sources consulted: Purple Corn: Pilot Brewing Trial Overview, Rahr Technical Center, July 2020 MBAA Practical Handbook for the Specialty Brewer Vol. 1: Raw Materials & Brewhouse Operations, 2016
