  •  Brix: 9.0° – 16.0° 
  •  Specific Gravity: 1.036 – 1.065 
  •  Viscosity: 11 – 24 cm/min (Bostwick at 70°F) 
  •  Color: Dark purple, typical of cooked blackberries
